Download the title update you've deleted earlier. Make sure the game is not installed to your Hard Drive. Go back to Xbox Home, and start FIFA 11. Scroll down to FIFA 11, and delete the following: FIFA 11 Title Update #6, Squad 1, and Online Squad) Go into Hard Drive, and select Games and Apps. Clear your cache ( Xbox Home > Settings > System > Storage > Hover over Hard Drive, press (Device Options) > Clear System Cache). There are also various reports of using an old Xbox Console to get this glitch to work, but I can't vouch for that. Keep in mind that it might take multiple attempts to get the results needed. It appears to be rather random, whether or not it will unlock achievements or freeze your console, so follow the the steps mentioned below, and hope for the best. This is probably the easiest method in order to unlock most, if not all, achievements in this game. Make sure you have some TV shows lined up if you are going for the achievement. Goalkeeper seems to be working the best for people in order to grind out their 500 games played, as you can just stay in goal and do nothing during the game-time. 
After creating your pro, you can still change his team and position, so it doesn't really matter what you pick. From there, you can start creating your Pro with whatever features you want him to have. To create your Virtual Pro, from the Main Menu, go to Virtual Pro. You'll need to play 500 games with him, so including him in as many games as you can is something that you'll need to take into account as that seems to be the only achievement that can't be unlocked whilst trying to use the glitch mentioned below.
You can switch him in between teams later when you are going for the "Around the World" achievement. It's best to create your Virtual Pro as soon as you start the game. All these buttons have other combinations, such as + which makes your player give a lobbed through ball, and I suggest you experiment with all those in game since practise makes perfect.
